One of my biggest loves is FOOD
I love everything about food, including cooking it and eating it!
I also love to change recipes to make them my own recipes so I've decided to share some of them on my blog.

Coca-Cola Cupcakes


What you'll need:
2 cup                      Coke (do not use diet)
1 cup (130g)          dark unsweetened cocoa powder
1/2 cup (113g)       unsalted butter, cut into 1-inch pieces
1 1/4 (250g)           granulated sugar
1/2 cup (110g)       firmly packed dark brown sugar
2 cups (256g)        all-purpose flour
1 1/4  teaspoon     baking soda
1 teaspoon            salt
2                             large eggs


What to do:

Preheat the oven to 165 degrees Celsius. 
In a small saucepan, heat the Coca-cola, cocoa powder and butter over medium heat until the butter is melted. 

Add the sugars and whisk until dissolved. Remove from the heat and let cool.


In a large bowl, whisk the flour, baking soda and salt together.
In a small bowl whisk the eggs together until just beaten.

Then whisk them into the cooled cocoa mixture until combined. Gently fold the flour mixture into the cocoa mixture.
The batter will be lumpy–do not over-beat, as it could cause the cupcakes to be tough.

Pour the batter into the prepared cupcake liners. 

Bake for about 20 minutes until a small skewer inserted into the cake comes out clean.
Rotate the pan halfway through the baking time. Transfer the cupcakes to a wire rack and allow to cool completely before icing.
Finishing Touches:
These cupcakes can be eaten on their own, covered with frosting or sprinkled with icing sugar!
Here's what to do for frosting:
Whisk the following ingredients together
1 1/2 cups         double/whipping cream
4 tablespoon    powdered sugar
1 teaspoon       vanilla extract
Use a piping bag to put the frosting on the cupcakes. 

If you don't have a piping bag, use a desert spoon to spoon on the frosting and then use a tooth-pick to swirl the frosting!

 
For visual effect finish of with a small Cola jelly or a cherry! :)
